Start with kachori-sabzi
The proper Banarasi breakfast is hot, flaky kachoris with a spicy potato sabzi and a piece of jalebi. Find a busy stall near the ghats around 7 AM, eat standing up, and you'll understand why locals swear by it.
Then keep going
- Tamatar chaat — a Banaras original, tangy and unforgettable, best at the Kashi Chaat Bhandar area.
- Baati chokha — rustic, smoky, deeply comforting.
- Malaiyo — a winter-only saffron foam dessert that tastes like a cloud. Don't miss it from October to February.
- Blue Lassi — thick, served in a clay cup, with a wall of traveller photos.
End with paan
A Banarasi paan is not just a mouth freshener; it is a full stop to a good meal. Ask for a meetha paan if you're new to it.
Rule of thumb: eat where the crowd is local and the pan is turning fast. Fresh and busy beats fancy and empty.
Carry water, eat freshly fried things, and pace yourself. Banaras is a feast that lasts for days.
